This is the perfect opportunity for a relaxed, virtually social way to learn about Bermuda’s culinary heritage. John and Alison took over the Ledgelets (formerly part of the now closed Lantana Colony Club) five years ago, and have re-introduced three cottages to their vacation rental collection – currently open for staycations! Put on your chef’s hat and and gather these ingredients:
- Salted Codfish (soaked the night before in cold water; drain in the morning and re-soak in cold water until cook time)
- 4 Eggs (hard-boiled)
- 2 Avocados
- 2 Bananas
- 1/2 lb Red Potatoes (or any small round potato)
- Extra Virgin Olive Oil and/or butter
- Fresh Thyme
- Fresh Parsley
- Salt
- Pepper
